  • 12 ounces Pastrami thinly sliced
  • 1 cup Sauerkraut drained
  • 1 cup Swiss cheese shredded
  • 1/2 cup Thousand Island dressing
  • 2 large Russet potatoes cooked and mashed
  • 2 Eggs beaten
  • 1/2 cup Breadcrumbs

  • Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  • In a large bowl, combine mashed potatoes, beaten eggs, and breadcrumbs. Mix well.
  • Spread half of the potato mixture in the prepared baking dish.
  • Layer pastrami, sauerkraut, and Swiss cheese over the potatoes.
  • Drizzle with Thousand Island dressing.
  • Top with remaining potato mixture.
  • Bake for 30-35 minutes, or until golden brown and heated through.
  • Let cool slightly before serving.

Notes

For a spicier kick, add a pinch of red pepper flakes to the potato mixture. Leftovers can be stored in the refrigerator for up to 3 days.
