  • 8 oz Rice Noodles
  • 1 cup Shredded Carrots
  • 1 cup Shredded Cabbage
  • 1 cup Chopped Cucumber
  • 1/2 cup Chopped Cilantro
  • 1/2 cup Chopped Peanuts Roasted or raw

Peanut Dressing

  • 1/2 cup Peanut Butter
  • 2 tbsp Soy Sauce
  • 2 tbsp Rice Vinegar
  • 1 tbsp Honey or Maple Syrup
  • 1 tbsp Sesame Oil
  • 2-3 tbsp Water Add until desired consistency is reached

  • Cook rice noodles according to package directions. Rinse with cold water and drain well.
  • In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey/maple syrup, sesame oil, and water until smooth and creamy. Adjust consistency with more water if needed.
  • In a large bowl, combine cooked noodles, shredded carrots, shredded cabbage, and cucumber.
  • Pour peanut dressing over the noodles and vegetables. Toss gently to combine.
  • Stir in chopped cilantro and peanuts.
  • Serve immediately or chill for later.

Notes

For a spicier salad, add a pinch of red pepper flakes to the dressing. You can also add other vegetables like bell peppers or edamame.
