  • 1 lb Ground Beef
  • 1 packet Taco Seasoning
  • 5 cups Shredded Lettuce
  • 1 cup Diced Tomatoes
  • 1 cup Shredded Cheddar Cheese
  • 1 can (15 oz) Black Beans drained and rinsed
  • 1 cup Corn Tortilla Chips crushed

Chipotle Ranch Dressing

  • 1/2 cup Mayonnaise
  • 1/4 cup Sour Cream
  • 1 tablespoon Chipotle Peppers in Adobo Sauce finely chopped
  • 1 tablespoon Lime Juice

  • Preheat oven to 375°F (190°C). Brown ground beef in a large skillet over medium-high heat; drain excess fat.
  • Stir in taco seasoning and cook according to package directions.
  • In a separate bowl, whisk together mayonnaise, sour cream, chipotle peppers, and lime juice until smooth.
  • Spread crushed tortilla chips on a baking sheet and bake for 5-7 minutes, or until lightly browned.
  • In a large bowl, combine lettuce, tomatoes, cheddar cheese, black beans, and cooked ground beef.
  • Drizzle chipotle ranch dressing over the salad and toss gently to combine.
  • Serve immediately, topped with baked tortilla chips.

Notes

For a spicier salad, add more chipotle peppers or a dash of your favorite hot sauce. You can also substitute ground turkey or chicken for the ground beef.
