  • 1 pound Shrimp Peeled and deveined
  • 2 Avocado Ripe, diced
  • 1 cup Cherry Tomatoes Halved
  • 1/4 cup Red Onion Finely chopped
  • 1/4 cup Cilantro Chopped
  • 2 tablespoons Lime Juice
  • 2 tablespoons Olive Oil
  • to taste Salt and Pepper

  • Heat olive oil in a large skillet over medium heat. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through.
  • In a small bowl, whisk together lime juice, salt, and pepper.
  • In a large bowl, combine the cooked shrimp, diced avocado, cherry tomatoes, red onion, and cilantro.
  • Pour the lime dressing over the salad and gently toss to combine.
  • Taste and adjust seasoning as needed.
  • Serve immediately or chill for later.

Notes

For a spicier kick, add a pinch of red pepper flakes to the dressing. You can also add other vegetables like cucumber or bell peppers to the salad.
