  • 1 pint Strawberries hulled and halved
  • 2 tablespoons Olive Oil
  • 2 tablespoons Granulated Sugar
  • 1 teaspoon Balsamic Vinegar
  • 1 cup Ricotta Cheese
  • 2 tablespoons Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt Pinch
  • 4 slices Bread Sourdough or country bread recommended
  • 2 tablespoons Honey Optional, for drizzling
  • 4 Fresh Basil Leaves Optional, for garnish

Instructions

  • Preheat oven to 400°F (200°C).
  • Toss halved strawberries with olive oil, granulated sugar, and balsamic vinegar on a baking sheet.
  • Roast for 15-20 minutes, or until strawberries are softened and slightly caramelized. Let cool slightly.
  • In a medium bowl, combine ricotta cheese, powdered sugar, vanilla extract, and salt. Whip with a hand mixer or whisk until light and fluffy.
  • Toast bread to your desired level of crispness.
  • Spread whipped ricotta onto each slice of toast.
  • Arrange roasted strawberries evenly over the ricotta.
  • Drizzle with honey and garnish with fresh basil leaves, if desired. Serve immediately.

Notes

For a richer flavor, use whole milk ricotta. You can also add a sprinkle of cinnamon or nutmeg to the whipped ricotta.
