  • 2 medium Cucumber peeled, seeded, and thinly sliced
  • 1/4 cup Red Onion thinly sliced
  • 1/2 cup Carrots julienned or shredded
  • 1/4 cup Fresh Cilantro chopped
  • 1 tablespoon Sesame Seeds

Dressing Ingredients

  • 2 tablespoons Rice Vinegar
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Sesame Oil
  • 1 teaspoon Honey or Maple Syrup
  • 1/4 teaspoon Red Pepper Flakes or to taste

  • In a large bowl, combine the sliced cucumbers, red onion, and carrots.
  • In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey (or maple syrup), and red pepper flakes.
  • Pour the dressing over the cucumber mixture and toss gently to combine.
  • Stir in the chopped cilantro.
  • Sprinkle with sesame seeds.
  • Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  • Serve chilled.

Notes

For a spicier salad, add more red pepper flakes. You can also add other vegetables like bell peppers or shredded cabbage. This salad is best served fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
