  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Baking soda
  • 1 tablespoon Pumpkin pie spice
  • 1/2 teaspoon Salt

Wet Ingredients

  • 1 cup Pumpkin puree
  • 1 cup Milk
  • 2 Eggs
  • 1/2 cup Melted butter
  • 1/2 cup Brown sugar
  • 1/2 cup Chopped pecans

  • Preheat your waffle iron according to manufacturer's instructions.
  • In a large bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt.
  • In a separate bowl, whisk together the pumpkin puree, milk, eggs, melted butter, and brown sugar.
  • Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  • Stir in the chopped pecans.
  • Pour 1/2 cup of batter onto the preheated waffle iron. Cook according to the waffle iron's instructions, usually 3-5 minutes, until golden brown and crispy.
  • Serve immediately with your favorite toppings, such as maple syrup, whipped cream, or more pecans.

Notes

For a richer flavor, use buttermilk instead of regular milk. You can also add chocolate chips or dried cranberries to the batter.
