  • 1 ½ cups All-purpose flour
  • 1 cup Granulated sugar
  • ¼ cup Unsweetened cocoa powder
  • 2 teaspoons Baking powder
  • ½ teaspoon Salt
  • 2 Eggs large
  • 1 cup Milk
  • cup Vegetable oil
  • ½ cup Strong brewed coffee cooled

Frosting Ingredients

  • 8 ounces Mascarpone cheese
  • 1 cup Heavy cream cold
  • ¼ cup Powdered sugar
  • 2 tablespoons Cocoa powder for dusting

  • Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
  • In a separate bowl, whisk together eggs, milk, oil, and cooled coffee.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  • Fill cupcake liners about ¾ full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cupcakes cool completely in the tin before frosting.
  • For the frosting: Beat mascarpone cheese until smooth. Beat in heavy cream and powdered sugar until stiff peaks form. Frost cooled cupcakes and dust with cocoa powder.

Notes

For a stronger coffee flavor, soak the cooled cupcakes briefly in a mixture of strong brewed coffee and coffee liqueur before frosting.
