  • 1 large Ripe Mango diced
  • 1 can (15 ounces) Black Beans rinsed and drained
  • 1/2 medium Red Onion finely chopped
  • 1/2 medium Red Bell Pepper diced
  • 1 cup Corn frozen or fresh, thawed if frozen
  • 1/4 cup Cilantro chopped

Dressing

  • 2 tablespoons Lime Juice
  • 2 tablespoons Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

  • In a large bowl, combine the diced mango, black beans, red onion, red bell pepper, and corn.
  • In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  • Pour the dressing over the mango and black bean mixture.
  • Gently toss to combine.
  • Stir in the chopped cilantro.
  • Taste and adjust seasonings as needed.
  • Serve immediately or chill for later.

Notes

For a spicier kick, add a pinch of chili powder to the dressing. You can also add other vegetables like chopped cucumber or avocado.
