Crust Ingredients

  • 1 1/2 cups Graham cracker crumbs
  • 1/4 cup Sugar
  • 6 tablespoons Melted butter

Filling Ingredients

  • 16 ounces Cream cheese softened
  • 1 cup Sugar
  • 1/2 cup Key lime juice
  • 1 cup Heavy cream
  • 1 cup Pineapple chunks drained
  • 1 teaspoon Rum extract optional
  • 1/4 cup Coconut flakes for garnish

  • Preheat oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a 9-inch springform pan.
  • Bake for 10 minutes, then cool completely.
  • In a large bowl, beat cream cheese and sugar until smooth.
  • Beat in key lime juice and rum extract (if using).
  • Fold in the heavy cream and drained pineapple chunks.
  • Pour the filling over the cooled crust.
  • Bake for 40-50 minutes, or until the center is just set. Let cool completely before refrigerating for at least 4 hours.
  • Garnish with coconut flakes before serving.

Notes

For a less intense lime flavor, reduce the key lime juice to 1/4 cup. You can also use a different type of liquor in place of the rum extract, such as coconut rum.
