  • 1 bunch Kale Remove stems and chop roughly.
  • 1 Apple Any variety, cored and thinly sliced.
  • 1/2 cup Walnuts Toasted
  • 1/4 Red Onion Thinly sliced
  • 1/4 cup Cranberries (dried)
  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice Freshly squeezed
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper Freshly ground

  • Preheat oven to 350°F (175°C). Spread walnuts on a baking sheet and toast for 8-10 minutes, or until fragrant.
  • In a large bowl, massage the kale with 1 tablespoon of olive oil until it becomes slightly softer and more pliable.
  • Add the sliced apple, red onion, and dried cranberries to the bowl with the kale.
  • In a small bowl, whisk together the remaining olive oil, lemon juice, salt, and pepper to make the vinaigrette.
  • Pour the vinaigrette over the salad and toss gently to combine.
  • Add the toasted walnuts to the salad and toss again.
  • Serve immediately or chill for later.

Notes

For a creamier dressing, add 1 tablespoon of plain Greek yogurt to the vinaigrette. Feel free to add other ingredients like feta cheese, sunflower seeds, or different types of dried fruit.
