  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar packed
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Soda
  • 2 cups All-Purpose Flour
  • 1/2 teaspoon Salt

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the peanut butter, granulated sugar, and brown sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • In a separate bowl, whisk together the baking soda, flour, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets.
  • Use a fork to flatten each ball, creating a criss-cross pattern.
  • Bake for 8-10 minutes, or until the edges are lightly golden brown. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, add 1/2 cup of chocolate chips to the dough. Store cookies in an airtight container at room temperature for up to a week.
