  • 1 lb Ground Beef
  • 1 Onion chopped
  • 2 Carrots chopped
  • 2 stalks Celery chopped
  • 6 cups Beef Broth
  • 1 can (14.5 oz) Diced Tomatoes undrained
  • 1 can (15 oz) Kidney Beans drained and rinsed
  • to taste Seasoning (Salt, Pepper, Garlic Powder)
  • 8 oz Egg Noodles

  • Brown the ground beef in a large stockpot or Dutch oven over medium-high heat. Drain off any excess grease.
  • Add the chopped onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes.
  • Stir in the beef broth, diced tomatoes (undrained), kidney beans (drained and rinsed), and seasonings. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 15 minutes.
  • Add the egg noodles and cook until tender, about 8-10 minutes, or according to package directions.
  • Taste and adjust seasonings as needed. Serve hot.

Notes

For a thicker soup, you can mash some of the kidney beans before adding the noodles. Feel free to add other vegetables, such as potatoes or green beans.
