  • 1 cup Unsweetened Applesauce
  • 1/2 cup Milk (Almond or Dairy)
  • 2 Eggs
  • 1/4 cup Maple Syrup

Dry Ingredients

  • 1 1/2 cups Rolled Oats
  • 1 cup Whole Wheat Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1 cup Apples (Chopped) Granny Smith or Honeycrisp recommended
  • 1/2 cup Walnuts (Chopped) Optional

  • Preheat oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
  • In a large bowl, whisk together the applesauce, milk, eggs, and maple syrup.
  • In a separate bowl, combine the oats, flour, baking powder, and cinnamon.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Fold in the chopped apples and walnuts (if using).
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely before cutting and serving.

Notes

For a sweeter cake, add 1/4 cup more maple syrup. You can also substitute other fruits like blueberries or cranberries for the apples. Store leftover cake in an airtight container at room temperature for up to 3 days.
