  • 1.5 lbs Chicken Breast Cut into 1-inch cubes
  • 1/4 cup Olive Oil
  • 1/4 cup Lemon Juice Freshly squeezed
  • 1 tablespoon Dried Oregano
  • 2 cloves Garlic Minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 Red Onion thinly sliced (optional, for skewers)
  • 1 Bell Pepper any color, cut into 1-inch pieces (optional, for skewers)

  • In a large bowl, whisk together olive oil, lemon juice, oregano, minced garlic, salt, and pepper.
  • Add the chicken cubes to the bowl and toss to coat evenly in the marinade.
  • Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
  • If using, thread the chicken cubes, red onion and bell pepper onto skewers, alternating ingredients.
  • Preheat your grill or grill pan to medium-high heat.
  • Grill the souvlaki for 5-7 minutes per side, or until the chicken is cooked through and slightly charred.
  • Remove from grill and let rest for a few minutes before serving.
  • Serve immediately with pita bread, tzatziki sauce (optional), and a Greek salad.

Notes

For extra flavor, marinate the chicken overnight. You can also bake the souvlaki in a preheated oven at 400°F (200°C) for about 20-25 minutes, or until cooked through.
