  • 1.5 lbs Chicken Breast Cut into 1-inch cubes
  • 2 tbsp Olive Oil
  • 2 tbsp Lemon Juice
  • 1 tsp Dried Oregano
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 pint Cherry Tomatoes Halved
  • 1 Cucumber Diced
  • 1/2 Red Onion Thinly sliced
  • 1/2 cup Kalamata Olives Pitted and halved
  • 4 oz Feta Cheese Crumbled

  • Preheat oven to 400°F (200°C).
  • In a large bowl, toss chicken with olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
  • Spread chicken in a single layer on a baking sheet.
  • Bake for 25-30 minutes, or until chicken is cooked through.
  • While chicken is baking, prepare the vegetables. Combine cherry tomatoes, cucumber, red onion, and olives in a bowl.
  • Divide the vegetables among four bowls. Top with cooked chicken and crumbled feta cheese.
  • Drizzle with extra lemon juice if desired.

Notes

For a heartier bowl, add cooked quinoa or brown rice. Other vegetables like bell peppers or zucchini can also be added.
