  • 1.5 lbs Boneless, Skinless Chicken Breasts Cut into 1-inch cubes
  • 1 cup Long-Grain Rice
  • 2 cups Chicken Broth
  • 1 Lemon Zested and juiced
  • 2 tablespoons Olive Oil
  • 1/2 Onion Diced
  • 2 cloves Garlic Minced
  • 1 teaspoon Dried Oregano
  • to taste Salt and Pepper

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides.
  • Add diced onion and minced garlic to the skillet and cook for 2-3 minutes, until softened.
  • Stir in rice, chicken broth, lemon zest, lemon juice, oregano, salt, and pepper. Bring to a simmer.
  • Cover the skillet and transfer to the preheated oven. Bake for 20-25 minutes, or until the rice is cooked through and the chicken is cooked thoroughly.
  • Remove from oven and let stand for 5 minutes before serving.

Notes

For extra flavor, add a handful of chopped fresh parsley or dill before serving. You can also substitute other vegetables like bell peppers or zucchini.
