  • 1 cup Farro
  • 2 cups Water
  • 5 ounces Arugula
  • 1 cup Cherry Tomatoes halved
  • 1/2 Cucumber diced
  • 1/4 Red Onion thinly sliced
  • 1/2 cup Feta Cheese crumbled

Vinaigrette

  • 2 tablespoons Lemon Juice
  • 3 tablespoons Olive Oil
  • 1 teaspoon Dijon Mustard
  • to taste Salt and Pepper

Instructions

  • Rinse the farro under cold water.
  • Combine farro and water in a medium saucepan. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until tender.
  • Drain any excess water and let the farro cool slightly.
  • In a large bowl, whisk together lemon juice, olive oil, Dijon mustard, salt, and pepper.
  • Add the cooled farro, arugula, cherry tomatoes, cucumber, and red onion to the bowl. Toss gently to combine.
  • Gently stir in the crumbled feta cheese.
  • Serve immediately or chill for later.

Notes

For a heartier salad, add grilled chicken or chickpeas. You can also substitute other greens for the arugula, such as spinach or kale.
