  • 1 lb Ground Beef
  • 1 packet Taco Seasoning
  • 1 medium Onion chopped
  • 1.5 cups Tortilla Chips crushed
  • 1 can (15 oz) Diced Tomatoes undrained
  • 2 cups Shredded Cheddar Cheese
  • 1 can (15 oz) Refried Beans

  • Preheat oven to 375°F (190°C).
  • Brown ground beef in a large skillet over medium-high heat. Drain excess grease.
  • Add chopped onion and cook until softened, about 5 minutes.
  • Stir in taco seasoning and cook according to package directions.
  • In a large bowl, combine cooked beef mixture, crushed tortilla chips, diced tomatoes (undrained), and refried beans.
  • Pour mixture into a greased 9x13 inch baking dish. Sprinkle with shredded cheddar cheese.
  • Bake for 25-30 minutes, or until heated through and cheese is melted and bubbly.
  • Let cool slightly before serving.

Notes

Top with your favorite taco toppings such as sour cream, guacamole, salsa, or lettuce before serving. You can also substitute ground turkey or chicken for the beef.
