  • 1/4 teaspoon Ground Cinnamon

  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract

  • 12 Large Marshmallows
  • 12 Milk Chocolate Squares about 12 ounces
  • 2 inches Vegetable Oil for frying
  • Optional Powdered Sugar for dusting

  • Prepare the batter: In a medium bowl, whisk together the graham cracker crumbs, flour, sugar, cinnamon, and salt.
  • In a separate bowl, whisk together the milk, eggs, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix. The batter should be thick but pourable.
  • Assemble the s'mores: Take one marshmallow and place a square of chocolate on top. Gently press them together.
  • Heat the oil to 350°F (175°C) in a deep fryer or large pot. Use a candy thermometer to monitor the oil temperature.
  • Dip each marshmallow-chocolate assembly into the batter, ensuring it's fully coated. Carefully place the battered s'mores into the hot oil, a few at a time, to avoid overcrowding.
  • Fry for about 1-2 minutes per side, or until golden brown and the marshmallow is puffed and slightly golden.
  • Remove the fried s'mores from the oil using a slotted spoon and place them on a wire rack or paper towel-lined plate to drain excess oil.
  • While still warm, dust the fried s'mores with powdered sugar, if desired. Serve immediately and enjoy!

Notes

For best results, use large marshmallows and high-quality chocolate. Be careful when handling hot oil. Adjust frying time depending on the size of your s'mores and the heat of your oil.
