  • 1 pound Cheese Tortellini
  • 1 pound Shrimp peeled and deveined
  • 10 ounces Fresh Spinach roughly chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Olive Oil
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese grated
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/4 cup Fresh Basil chopped, for garnish (optional)

  • Cook tortellini according to package directions in a large pot of boiling salted water until al dente. Drain, reserving about 1/2 cup of pasta water.
  • While tortellini cooks, heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp and set aside.
  • Add minced garlic to the skillet and cook for about 30 seconds, until fragrant.
  • Add chopped spinach to the skillet and cook for 2-3 minutes, until wilted.
  • Pour in heavy cream, Parmesan cheese, salt, and pepper. Bring to a simmer and cook for 1-2 minutes, until slightly thickened.
  • Add cooked tortellini and shrimp to the skillet. Toss to combine. Add reserved pasta water if needed to thin the sauce.
  • Serve immediately, garnished with fresh basil (optional).

Notes

For a spicier dish, add a pinch of red pepper flakes to the cream sauce. You can also substitute other types of pasta for the tortellini.
