  • 6 slices Bacon Cooked and crumbled
  • 1 head Romaine Lettuce Washed and chopped
  • 1 Avocado Ripe, diced
  • 1 cup Cherry Tomatoes Halved
  • 2 Hard-boiled Eggs Chopped
  • 1/4 cup Red Onion Finely chopped
  • 1/2 cup Blue Cheese Crumbles
  • 1/4 cup Cobb Salad Dressing Your favorite brand or homemade

  • Preheat oven to 400°F (200°C). Place bacon slices on a baking sheet and bake for 15-20 minutes, or until crispy.
  • Remove bacon from oven and let cool slightly. Crumble bacon into small pieces.
  • Wash and chop the romaine lettuce.
  • Dice the avocado and chop the hard-boiled eggs.
  • Halve the cherry tomatoes and finely chop the red onion.
  • In a large mixing bowl, combine the lettuce, avocado, tomatoes, eggs, red onion, bacon, and blue cheese.
  • Drizzle with your favorite Cobb salad dressing and toss gently to combine.
  • Serve immediately and enjoy!

Notes

For a vegetarian option, omit the bacon and add some roasted chickpeas or croutons for extra crunch. You can also adjust the amount of blue cheese to your liking.
