  • 3/4 cup Unsweetened cocoa powder
  • 1 1/2 teaspoons Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 1/4 cups Granulated sugar
  • 2 Eggs large
  • 1 cup Milk
  • 1/2 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 1 cup Boiling water

Frosting Ingredients

  • 8 ounces Cream cheese softened
  • 4 cups Powdered sugar
  • 4 tablespoons Butter softened
  • 1 teaspoon Vanilla extract

  • Preheat oven to 375°F (190°C). Grease and flour a 13x9 inch baking pan. Line with parchment paper, leaving an overhang on the sides to lift the cake out later.
  • In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  • In a separate bowl, cream together sugar, eggs, milk, oil, and vanilla extract until light and fluffy. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in boiling water.
  • Pour batter into the prepared pan and bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  • Immediately after baking, invert the cake onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper.
  • Starting from the short end, tightly roll the cake and the towel together. Let cool completely.
  • While the cake is cooling, prepare the frosting: Beat together cream cheese, powdered sugar, butter, and vanilla extract until smooth and creamy.
  • Unroll the cooled cake and spread the frosting evenly over the surface. Carefully roll the cake back up and dust with powdered sugar before serving.

Notes

For a richer flavor, use dark cocoa powder. You can also add chocolate chips to the batter or use a different type of frosting.
