  • 24 cookies Chocolate sandwich cookies crushed
  • 2 quarts Vanilla ice cream slightly softened
  • 1 15 ounce can Cherry pie filling
  • 1/2 cup Semi-sweet chocolate chips melted
  • 1 cup Whipped cream optional, for topping
  • 10-12 cherries Maraschino cherries optional, for garnish

Instructions

  • Crush chocolate cookies into fine crumbs.
  • Spread half of the crushed cookies in the bottom of a 9x13 inch baking pan.
  • Spread half of the softened vanilla ice cream over the cookie layer.
  • Spread the cherry pie filling evenly over the ice cream layer.
  • Repeat layers: remaining cookie crumbs, remaining ice cream.
  • Drizzle melted chocolate chips over the top.
  • Freeze for at least 4 hours, or until solid. Top with whipped cream and maraschino cherries before serving (optional).

Notes

For a richer flavor, use chocolate ice cream instead of vanilla. You can also add other fruits or candies to customize the cake.
