  • 1 pound 1 pound Pasta (Elbow, Penne, or Rotini)
  • 1 pound 1 pound Ground Beef
  • 1 packet 1 packet Taco Seasoning
  • 1 can 1 (15 ounce) can Diced Tomatoes, undrained
  • 1 cup 1 cup Shredded Cheddar Cheese
  • 0.5 cup 1/2 cup Shredded Monterey Jack Cheese
  • 0.25 cup 1/4 cup chopped green onions
  • 0.5 cup 1/2 cup Water

  • Cook pasta according to package directions. Drain and set aside.
  • While pasta cooks, brown ground beef in a large pot over medium-high heat. Drain off any excess grease.
  • Stir in taco seasoning and diced tomatoes. Bring to a simmer and cook for 5 minutes, or until heated through.
  • Add cooked pasta to the pot with the beef mixture. Stir to combine.
  • Stir in water and remove from heat.
  • Pour into a greased 9x13 inch baking dish. Sprinkle with cheddar and Monterey Jack cheese.
  • Bake in a preheated oven at 350°F (175°C) for 10-15 minutes, or until cheese is melted and bubbly.
  • Garnish with chopped green onions before serving.

Notes

For a spicier dish, add a pinch of red pepper flakes to the beef mixture. You can also add other vegetables like bell peppers or onions.
