  • 1 lb Ground beef
  • 1 medium Onion chopped
  • 1 Green bell pepper chopped (optional)
  • 2 cloves Garlic minced
  • 1 15 ounce can Tomato sauce
  • 1 10.75 ounce can Cream of mushroom soup condensed
  • 1 cup Cooked rice
  • 1 cup Cheddar cheese shredded
  • 1/2 cup Monterey Jack cheese shredded
  • 1/4 cup Milk
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

  • Brown the ground beef in a large skillet over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  • Add the chopped onion and green bell pepper (if using) to the skillet and cook until softened, about 5 minutes.
  • Stir in the minced garlic and cook for 1 minute more.
  • In a large bowl, combine the tomato sauce, cream of mushroom soup, cooked rice, milk, oregano, salt, and pepper.
  • Add the cooked ground beef and vegetable mixture to the bowl and stir to combine.
  • Pour the mixture into a greased 9x13 inch baking dish.
  • Sprinkle the cheddar and Monterey Jack cheese evenly over the top.
  • Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  • Let stand for a few minutes before serving.

Notes

For a spicier casserole, add a pinch of red pepper flakes. You can also substitute other cheeses, such as Colby Jack or pepper jack.
