  • 2 Large ripe tomatoes About 1 pound total
  • 8 ounces Fresh mozzarella balls Ciliegine or similar size
  • 1 cup Fresh basil leaves packed
  • 2 tablespoons Balsamic glaze
  • 2 tablespoons Extra virgin olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Freshly ground black pepper

  • Wash and slice the tomatoes into approximately 1/2-inch thick rounds.
  • If using a block of mozzarella, slice it into rounds the same thickness as the tomatoes.
  • Arrange alternating slices of tomato and mozzarella on a serving platter.
  • Tuck fresh basil leaves between the tomato and mozzarella slices.
  • Drizzle the balsamic glaze and olive oil evenly over the salad.
  • Season with salt and freshly ground black pepper to taste.
  • Serve immediately and enjoy!

Notes

For a variation, add a sprinkle of toasted pine nuts or a drizzle of pesto. You can also use different types of cheese, such as burrata or fresh ricotta.
