  • 8 ounces Chorizo Casings removed
  • 6 Eggs Large
  • 1/2 medium Onion Finely chopped
  • 1/2 medium Bell pepper Finely chopped (any color)
  • 1 cup Shredded cheddar cheese
  • 8 Flour tortillas 6-8 inch
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/2 cup Salsa Your favorite kind

  • Cook chorizo in a large skillet over medium heat, breaking it up with a spoon, until browned and cooked through. Drain off any excess grease.
  • Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  • In a mixing bowl, whisk together eggs, salt, and pepper.
  • Pour the egg mixture into the skillet with the chorizo and vegetables. Cook, stirring occasionally, until the eggs are set.
  • Warm tortillas according to package directions.
  • Fill each tortilla with the chorizo and egg mixture and top with shredded cheese and salsa.
  • Serve immediately and enjoy!

Notes

For a spicier taco, use a spicier chorizo or add a pinch of red pepper flakes to the egg mixture. You can also add other toppings such as avocado, sour cream, or cilantro.
