  • 1 cup Refried Beans
  • 1 cup Shredded Cheddar Cheese
  • 4 Scrambled Eggs
  • 1/4 cup Chopped Green Onions
  • 1/2 cup Diced Tomatoes
  • 1/4 cup Sour Cream Optional
  • To taste Hot Sauce Optional

  • Preheat oven to 350°F (175°C).
  • Spread tortilla chips in a single layer on a baking sheet.
  • Spread refried beans evenly over the chips.
  • Sprinkle shredded cheddar cheese over the beans.
  • Bake for 5-7 minutes, or until cheese is melted and bubbly.
  • Remove from oven and top with scrambled eggs, green onions, diced tomatoes, sour cream, and hot sauce (if using).
  • Serve immediately and enjoy!

Notes

For a spicier kick, add a pinch of chili powder to the refried beans or use a spicier cheese. You can also add other breakfast toppings such as bacon, sausage, avocado, or salsa.
