  • 1 pound Sausage Brown and crumbled
  • 8 Eggs Large
  • 1 cup Shredded cheddar cheese
  • 1/2 cup Chopped onions
  • 1/2 cup Chopped bell peppers Any color
  • 4 Large flour tortillas 12-inch diameter
  • 1/2 cup Salsa Your favorite kind
  • 1/4 cup Sour cream or Greek yogurt Optional

  • Cook sausage in a large skillet over medium heat until browned and crumbled. Drain off any excess grease.
  • In a mixing bowl, whisk together eggs, salt, and pepper.
  • Add chopped onions and bell peppers to the skillet with the sausage. Cook for 2-3 minutes, until slightly softened.
  • Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are set but still slightly moist.
  • Stir in the shredded cheddar cheese until melted.
  • Warm the tortillas according to package directions.
  • Spoon the sausage and egg mixture into the center of each tortilla. Top with salsa and sour cream or Greek yogurt (optional).
  • Fold the tortillas in half or roll them up tightly. Serve immediately.

Notes

Feel free to add other fillings to your burrito, such as black beans, avocado, or your favorite hot sauce. For a vegetarian option, substitute the sausage with crumbled tofu or mushrooms.
