  • 1 lb 1 lb Pasta (penne, rotini, or similar)
  • 1 can 1 (28 ounce) can crushed tomatoes
  • 1 cup 1 cup chopped onion
  • 1 cup 1 cup chopped bell pepper (any color)
  • 1 can 1 (15 ounce) can chickpeas, rinsed and drained
  • 0.5 cup 1/2 cup Kalamata olives, pitted and halved
  • 0.5 cup 1/2 cup crumbled feta cheese
  • 2 tablespoons 2 tablespoons olive oil
  • 1 teaspoon 1 teaspoon dried oregano
  • Salt and pepper to taste

  • Preheat oven to 375°F (190°C). Cook pasta according to package directions until al dente.
  • While pasta cooks, heat olive oil in a large skillet over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes.
  • Stir in crushed tomatoes, chickpeas, olives, oregano, salt, and pepper. Simmer for 10 minutes, stirring occasionally.
  • Drain the cooked pasta and add it to the skillet with the tomato sauce. Stir to combine.
  • Pour the pasta mixture into a greased 9x13 inch baking dish.
  • Sprinkle feta cheese over the top.
  • Bake for 20-25 minutes, or until heated through and bubbly.
  • Let cool slightly before serving.

Notes

For a spicier dish, add a pinch of red pepper flakes to the sauce. You can also add other vegetables like zucchini or spinach.
