  • 4 slices Bread Sourdough or whole wheat recommended
  • 2 Avocado Ripe
  • 4 Eggs
  • 1 tablespoon Lime juice
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/2 teaspoon Chili flakes To taste

  • Toast the bread to your desired level of crispness.
  • While the bread is toasting, gently mash the avocados in a bowl with a fork. Add lime juice, salt, and pepper. Mix well.
  • Gently simmer water in a small saucepan. Once simmering, create a gentle swirl and carefully crack an egg into the water for each toast.
  • Poach the eggs for 3-4 minutes, or until the whites are set and the yolks are still runny.
  • Remove the poached eggs with a slotted spoon and gently place one on each slice of toast.
  • Spread the mashed avocado evenly over the toast.
  • Sprinkle chili flakes over the avocado and poached eggs.

Notes

For a richer flavor, use a high-quality avocado oil to toast the bread. Feel free to add other toppings such as red pepper flakes, everything bagel seasoning, or feta cheese.
