Salad Ingredients

  • 5 oz Mixed Greens
  • 1 Apples (Honeycrisp or Fuji) cored and thinly sliced
  • 1/2 cup Walnuts, toasted
  • 4 oz Blue Cheese crumbled
  • 1/4 Red Onion thinly sliced

Vinaigrette Ingredients

  • 2 tbsp Maple Syrup
  • 1 tbsp Dijon Mustard
  • 3 tbsp Olive Oil
  • 1 tbsp Apple Cider Vinegar
  • to taste Salt and Pepper

  • Toast walnuts in a dry skillet over medium heat for 5-7 minutes, or until fragrant and lightly browned. Set aside to cool.
  • In a small bowl, whisk together maple syrup, Dijon mustard, olive oil, apple cider vinegar, salt, and pepper until well combined.
  • In a large bowl, combine mixed greens, sliced apples, toasted walnuts, and red onion.
  • Pour the vinaigrette over the salad and toss gently to coat.
  • Crumble blue cheese over the salad.
  • Serve immediately or chill for later.

Notes

For a sweeter salad, use more maple syrup. You can substitute pecans or other nuts for the walnuts. Add some dried cranberries or goat cheese for extra flavor and texture.
