Ingredients
  

Crepe Batter

  • 1 cup All-purpose flour
  • 2 tablespoons Sugar
  • 2 Eggs
  • 1 cup Milk
  • 2 tablespoons Melted butter
  • 1/4 teaspoon Salt

Filling & Sauce

  • 2 medium Apples (peeled and thinly sliced)
  • 1 teaspoon Ground cinnamon
  • 1 tablespoon Butter for sautéing apples
  • 1/2 cup Sugar for caramel sauce
  • 1/4 cup Heavy cream for caramel sauce

  • In a mixing bowl, whisk together flour, sugar, eggs, milk, melted butter, and salt until smooth.
  • Let the batter rest for at least 15 minutes.
  • Heat a lightly oiled crepe pan over medium heat.
  • Pour 1/4 cup of batter onto the hot pan, swirling to create a thin crepe.
  • Cook for 1-2 minutes per side, or until golden brown.
  • Meanwhile, sauté apples with 1 tablespoon of butter and cinnamon until softened.
  • For the caramel sauce: In a saucepan, combine sugar and a splash of water. Cook over medium heat, swirling occasionally, until a rich caramel forms. Carefully stir in heavy cream (it will bubble up).
  • Spread the apple mixture over each crepe and drizzle with caramel sauce. Serve immediately.

Notes

For a richer flavor, use brown sugar instead of white sugar in both the crepe batter and the caramel sauce. You can also add a pinch of nutmeg or cardamom to the apple filling.
